very noticeable compression artifacts on larger screens (40"+) versus the remux.

yes. remuxing means taking the video/audio from the disc and putting it in a new container (almost always mkv); the video and audio are the same quality as an untouched copy of the disc, it just usually means that it lacks extras and sometimes certain audio streams. so remuxes are the same quality as untouched, therefore they are the best quality available.

since it seems like you know about this stuff, can you help me finding a player to run this? in the past I've downloaded 2160p video files and VLC won't cut it. I've done research, and I realized VLC lacks in the codecs department. What do you use personally? I'm relatively new to all this, so if necessary links to guides would be greatly appreciated.

*Barely noticeable. These CRF17 encodes are incredibly good especially when in motion. I've tried watching these 4ft away from a 65" and I had a really hard time telling the difference. I'm a stickler for quality and even I can't justify the remux file sizes, but if you have the storage and bandwidth to spare by all means get the remux as it is fat and away the best quality you can get. I unfortunately am limited on both so to get 90% the quality for 1/3rd the file size is a very compelling option to me. I'm just happy there are great options out there for both file types.
