I'm probably only going to get one or two seasons of this, are there any must have seasons?
That's a tough question for me to answer. I haven't watched all of it. If no one comes by to give you suggestions, perhaps you could look at the list of nominations and awards to get a sense of what seasons/episodes were considered more worthy?

Stick to the earlier seasons. The later seasons MacGyver turned from a think tank gadget guy doing cool shit to a straight up social worker. It got weird towards the end.
