All episodes that were shot in HD are presented in HD, without being compressed by shitty youtube compression.

Download the disc files, convert to ISO, mount it, then use MakeMKV?

Could just watch the episodes as they are (you can find 'em in the STREAM folder). I do recommend using something like DVDFab to put them into a matroska container (MKV Passthrough if you don't want to lose any quality).

No need for all that just use Handbrake. It's the best thing I've found for ripping and converting, it's free and open source too. It's pretty easy to use but you'll find plenty of guides for it online as well.

Hoping you can release the remaining bluray compilations untouched.

I have AVGN Volumes 1-6 as DVD iso files. Each volume has 3 discs, except for seasons 1 which is only 2 discs.
