Something messed up when the final scene was being filmed, but Kurosawa liked the result and kept the take. It ended up creating a film trope used in many samurai films (including Kill Bill).

I've noticed that the picture on these Tigole encodes is quite...grainy. Are there other x265 encoders that avoid that?

They are grainy because bluray movies have film grain. Some people like it, some people don't. PSA tends to remove most of the film grain from their releases.

movies are grainy because that's how directors wanted them to look (except very old movies), why would you want to edit them?

Grain is detail. Take that away and you're left with nothing but a blurred mess.
