Open matte refers to a version of the film that’s shown as full screen instead of wide screen. Normally this means the film is cropped so you have less picture (the left and right is missing) but in an open matte you actually get more picture and see the bottom and top that was cut from the picture.

This can be interesting as sometimes you see stuff not originally intended. This can be from sets ending, crew, and even (such as in the recent fifth element open matte) unintended nudity.

Yeah, just to add on for others reading, this kind of stuff is a cool insight for those who are interested in making-ofs and movie processes, but almost always not the better version just because you see more.

It's not usually what the director/cinematographer wanted the audience to see in their frames, so shouldn't be the definitive and/or first-time viewing for a movie.

Here's an example of that from the climax of the Special Edition of The Abyss. In this shot in the 2.35:1 presentation we can see only one wave in all of the shots. But in the 16:9 presentation that aired on HDTV, in the single shot where a real wave was used we can see another, smaller wave ahead of it. I don't know if the director considers that an error creeping into frame, but it kind of ruins the moment for me.

When they shoot a movie for theatrical release they block off some of the top and bottom with black bars, to fit the aspect ratio of the theater. What we have here (open matte) would be the untouched movie where you will see extra visuals at the top and bottom, sometimes unintended things that weren't supposed to be seen.

If I'm not mistaken, the open matte would've been extracted from the 3D version of the film, so it would still be an 'official' version of the movie.
