I willing to help but am pretty noob at this. How can I check?
Open with VLC and press Ctrl+J (or access "Codec Info" from the menu). Then check the codec of the video stream.
Or, if you have MediaInfo installed (comes with K-Lite codec pack, I think), you right click the file and choose MediaInfo.

Checked 3 at random, they do seem to be h264.

With a 2GB movie file, if it looks like compressed ass then it is x264, if it looks alright then it is x265.

I am unsure. Whenver I open one of them (VLC) they always take the name "Talesfrom_Earthsea(2006)[1080p,Bluray,flac,dts,x264]-_THORA", I do not know why.
That at least mean that Tales from Earthsea is x264, but I do not know about the other.
The quality on all is pretty good in my opinion, but I'm not really a purist.

Any scenes with lots of movement will get lots of blocky colors due to video compression and a low bitrate.
At 2GB a 720p copy will look better than 1080p.
that's a shitty comparison. x265 is optimized for 4k content so if you use default settings the video will look washed out.(due to the larger block sizes) Granted you can use good settings and get near x264 quality but then you can just use x264. Just make sure to use 10 bit.

It is possible, but it is pretty common for a x265 copy to look better with less compression than x264 when they are the same file size, especially at lower file sizes.
A 2GB x265 will look better than 2GB x264. Though it doesn't take much to look better than 2GB x264 1080p.

Which one should I watch?
I have watch Spirited Away long time ago but I don't feel like it as good as people told me. Should I watch it again?

Princess Mononoke hits the sweet spot between deeper themes and flat out action. If Spirited Away didn't suit you, try that. Most of Studio Ghibili is on the level of Spirited Away so it may not be for your tastes.

I also recommend Princess Mononoke. It's my personal favorite. It's less quirky than some of their other films, which in turn makes it a bit more accessible.

Laputa - Castle in the sky is my big time favorite. Love it.
In my opinion you should always watch it with Japanese audio. That's the way they created it. It is part of the Ghibli experience. And I noticed they added extra lines in the English versions where there are no lines in the original (Japanes) versions.
