for example, after extracting with 7-zip the fargo s1+s2 links posted have a couple of episodes where they seem to be split across separate .rars

Highlight all parts, right click and then click extract here. All the files will extract into a folder with the episodes

i'm a fool, i was doing the extracting part all wrong - thankyou, sorry for the unnecessary clutter guys, i appreciate all the uploads

Or you can open any of the .rar files that are split up and drag to your desired location. As long as you have the full set they are all treated as one. :)

I'm having issues as well. 7zip gives me errors for all of the .rar files i try to extract.

You could try WinRaR on windows or RAR Expander on mac.
