If the release says 1080p, it doesn't necessarily mean it's 1920 x 1080. The movies with cinematic aspect ratio (2.40:1) are 1920 x 800 in size.

So when you play that file in a media player, the player detects the size of the video and adds black bars.

The only reason the source is ever cropped during an encode is when the video doesn't fit a 16:9 aspect ratio, since black bars are added to any no 16:9 1080p release.
